Portobello Udon

Looking for something different? Portobello Udon is an absolutely delicious lunch or dinner recipe. This recipe costs about $14.01 to make and feeds 3 people. 



  • 2 chopped Portobello mushrooms
  • 2 chopped carrots
  • 14 oz of Udon noodles
  • pinch of pepper
  • pinch of salt
  • pinch of basil
  • 32 fl oz of vegetable broth
  • 6 tablespoons of soy sauce
  • 5 tablespoons of olive oil




Step one: Combine the vegetable broth, salt, pepper, basil, and soy sauce into a medium - large pan. Turn heat to high and bring to a boil, then immediately decrease heat to medium-low and bring back down to a simmer. Let simmer.


Step two: Combine the chopped carrots & mushrooms into a medium sized skillet. Drizzle the olive oil over the mixture. Add in a pinch of salt, pepper, and basil. 


Step three: Cover the top with tin foil and let cook on medium heat for 12 minutes, stirring occasionally.


Step four: Combine the mushrooms, carrots, and udon into the vegetable broth. Let simmer for 10 minutes. About 5 minutes in break up the Udon with a fork. 


Step five: Serve! Super delicious noodle dish that will serve 3 people for only $14.01. Perfect for the vegetarian or mushroom lover.
